Clean & dry:
If needed, rinse the chicken lollipops under cold water and pat them dry using a paper towel or clean cloth. Drying helps the coating stick better and gives a crispier finish. -
Marinate the chicken:
In a mixing bowl, add red chili powder, black pepper powder, garlic paste (and ginger paste if using), salt, soy sauce (if using), and lemon juice (if using).
Mix well. Then add the chicken lollipops and rub the marinade thoroughly so each piece is coated evenly.

In a heavy-bottomed pan or kadai, pour enough oil for deep frying (or shallow-frying if preferred). Heat the oil over medium-high heat until it’s hot. To check if the oil is ready: drop a small pinch of flour β if it sizzles and rises immediately, the oil is ready. -
Fry the lollipops:
Gently place the coated chicken lollipops into the hot oil. Do not overcrowd the pan β fry in batches if needed.
Fry for about 6β8 minutes, or until they turn golden brown and crisp on the outside, and are fully cooked inside.
Use a slotted spoon to remove them and place them on a paper towel to drain any excess oil.
